This is another very EASY recipe for a homemade omelette.
Firstly, mix all the ingredients (minus the oil and ham if you are vegetarian) in a bowl. Be sure to chop the ham, tomato and spinach then season with some salt and pepper.
Heat some oil in a non-stick frying pan (enough so the omelette won't stick) over a medium heat. When it's hot, pour the egg mixture into the pan and leave to cook (over a medium heat).
Keep an eye on the omelette and when it begins to scramble, run a spatula around the edge. After 5 minutes it should be cooked, if need be, place under the grill for a few minutes to cook the top.
